Gluten Free – week one

Remember last week when I was talking about changing my diet up and omitting gluten from my diet?

Well, I’m here to report that so far all has been well with the gluten free diet.
It really has been fairly easy to stay gluten free and I do not feel that I am depriving myself at all. For some reason though I have been really craving potatoes. But I think that was before I started my diet. And I have no idea why I would be craving potatoes!

Although I was feeling a small amount of sadness when the girls at work had pizza on Friday, I was ok when I reminded myself that if I really wanted -  I could have the pizza but I was choosing not to have it because I was omitting the gluten from my diet. I was ok after that and I really did enjoy my chicken with brown rice and topped with a smidge of salsa!

And I also found the UNO restaurant has gluten free pizza! I love UNO’s. Have not gone there in a few months though. But since I know they have gluten free stuff, I will be going there more often! I also started taking a Prebiotic as well. So this might be helping out too.

Looking around the web, I gotta tell you I found some really great links for recipes and products as well. Here two of my favorites…

These sites have everything that you need to start you on your way to a gluten free lifestyle. I highly recommend them to get you started. You will not be disappointed.

Have I actually felt better since omitting gluten from my diet? This is pretty much a yes. Although I do not know if it’s all in my head or if there is an actual correlation to me omitting it from my diet.

What I have noticed is that this week I have only had one episode of pain in my tummy. And I am also not running to the bathroom 3 times in the morning as well.

Sorry, I know that is rather graphic to be writing about – but it’s something I have always had an issue with. I have only had one headache this week, and my bloating is not so noticeable as well.

Is there a connection? Could be. But then again it could be my brain wanting it to work as well. Either way, it has been a good week stomach wise – so I am happy.

I really do not know how long it takes for my tummy/intestines to heal from having the gluten sensitivity – if indeed I do have one.  I figure I will keep trying to omit it from my diet for a month and then re introduce it and see what happens.
